Yesterday was unseasonably warm for this time of year. You could hear the frogs and toads calling to one another.
Not too many nights are left where you will find these little guys hanging out under the lights catching their supper. They are fun to watch. Flick! And they have caught another tasty morsel.
Inside we too were enjoying our evening meal. This time it was Jalapeno cheddar soup. I had planned something else but we opened the wrong can. Oh, well. This is always tasty. Super easy too: a tin of cream of potato soup, 1.5 cups milk, 1.5 cups cheddar cheese, diced plum tomato, chopped up pickled Jalapeno peppers; heat, melt and blend. Crush corn chips to garnish and add chopped up green onions too. I use the submersible blender to make it all smooth.
Aaron was lamenting that he never got "his" birthday pie this year. Well, in my defense he was away at school at that time. His favourite birthday treat was the frozen President's Choice Key Lime pie. Just reading the ingredients would stop your heart! Very fresh and tasty though and fine for once a year. President's Choice seemed to think their fresh, tasty pie could be improved on and now it tastes awful. So no more Key Lime pie. I made him a post-birthday pie. Lemon meringue. The perfect end to summer.
