Monday brought a little more winter with it. Barely above freezing and lots of gusty wind. Perfect for homemade soup. The March Reader's Digest magazine had some soup recipes and the Sweet Potato, Carrot, Apple and Read Lentil Soup caught my attention. As I can't eat legumes I added four baby red potatoes in place of the lentils and it turned out beautifully! A submersible blender makes pureeing a breeze.On the side, a little Ace Bakery Harvest Grain bread with Swiss style unsalted butter (it tastes the way butter once did years ago.) The slices look like little bunnies. Spring is not gone for long!Whats your favourite cold weather meal?
