Wet Days Are Good For Soup!

I recently received the January issue of Jeanne D'Arc Living. Besides being a lovely way to escape the recent gloomy weather around here, they provided a number of soup recipes. Now, I realize you can get a good soup recipe anywhere and you don't need a Danish publication to find one, however, their potato soup was wonderful. It was very simple; just potatoes, onion, broth, thyme, a little cream and crisp bacon for garnish. I made fresh biscuits to round it out and we all enjoyed it very much. Mmmm.
